Organic Artisan Crafted Loaves 

Our loaves are known by the name of Hearth And Hand Wood-Fired Artisan Breads.These are traditional breads made with a 'Wild Yeast' culture. Natural fermentation from naturally occuring sugars in the grains gives way to 'Slow Rise' doughs,this 'slow' method increases the natural flavours. Our dough culture was started here in the valley from organic wine grapes,grown along side the Similkameen River.We hand shape our loaves and ferment our dough in ceramic crocks,a slow, cool ferment means abundant flavour,just as it's done in the old country.This is country bread at it's best!

  Our valley has been blessed with abundant sun,fertile soils and pure water.This makes the ideal conditions for some of the best grown produce in the world.In particular we favour Flatbread Pizza toppings.We select for our gardens the finest in heirloom variety tomatoes,peppers and onions.What we don't grow we source from the vast variety of organic growers here in the Similkameen and Okanagan,and even the Kootenays.Tasty varieties of garlic,herbs and vegetables.Organic artisan produced cheese from regional producers.A delicate blend of toppings added to our slow rise dough and  then straight into the earth ovens.These are true premium artisan Flat Breads.Go to the products section to check out our line of Flatbread Farms Frozen Flatbreads,vacuum sealed to insure you're gonna taste the 'flavour of the Similkameen'.

The oven is the key element for baking our naturally leavened 'Wild Yeast' doughs.The oven attains high temperatures which is ideally suited for baking the whole grain  flatbreads. Our slow rise loaves require the even distribution of heat a mass oven provides,thermal,convection and radiant heat are transfered into the doughs that is stored in the mass.This is what contributes to the 'oven spring' in the loaves,providing the unique crust and crumb and flavour that can only be obtained with slow rise, wood fired breads.

We hand craft each of our wood fire ovens,they are fueled with local fruit wood cuttings from the Similkameen Valley orchards.Infusing subtle flavours of cherry,apple,pear,apricot and even peach.When there is possible time to schedule,on occasion we will construct brick and/or clay ovens for dicerning clients who wish to have a custom oven built suited to their baking needs, in residential or commercial application.

 Flatbread Farms Is home for a farm based artisan producer of traditionally crafted country breads and flatbread pizzas baked in hand crafted wood fired clay ovens.Our kitchen is rooted in the garden,where we grow ingredients that go into our loaves and on our flatbread pizzas.This is not a factory,we think of our kitchen as a studio for creating the most flavourful creations,and the land around us as our palatte,offering colourful seasonal ingredients.
