Living and working in a rural environment brings all sorts of challanges to overcome.
One becomes educated in sustainability due out of neccessity.And to hold true to the above statement,it fast becomes evident that you cant have true quality of excellence without a sustainable model.
It has been our goal for the years in the making of our business to integrate a sustainable lifetyle and work that would support life on a farm.
It has been long in the making, but we are getting closer.
We are a family run operation in which we desire to provide the flavour of the country for other families at an affordable price.In a world where profit is the underlining motovation with it comes comprimise in quality to achieve profit at any cost
By growing our own ingredients, we are creating our product where it is grown,literally,our kitchen is surrounded by our crops.We cut out all the distributors that take their cut from the farmers, the shipping, and so on.
We want to be able to pass on the premium in Flatbreads for a comparable price of mass produced frozen pizza.
After living in Europe ,especially Italy, and returning to Canada, I discovered why food tastes so much better there. It is simple, it is a love and a passion for things done slowly and well.
Italy is the birth place of the "Slow Food" movement.It is a principle of producing food with the respect for the growers the producer and the consumer.
We desire the best quality of foods to be fed to our children, and this we create in all the food we produce.
In an effort to achieve this quality control, we have worked the long hard way to buy the farm and start growing the ingredients that go into every Flat Bread we produce.We build our own ovens by hand,we harvest the fruit wood ourselves locally that fire the ovens.
Our dough is hand mixed and shaped and cool fermented for 24-36 hours,leavened with with a wild yeast that was started here in the Similkameen valley over 6 years ago from organically grown wines grapes grown along the Similkameen River.
We truely want you to enjoy the subtle deep flavours of where we live and work,we want to do our job to preserve the joy achieved from tasting something that comes from hard work and integrity.
We have a ways to go yet, and we know alot of faithful flatbread lovers have been waiting patiently for our product.
